(Peanut Free) School safe "Peanut Butter" Cookies (Soynut Butter Cookies!)
10:10:00 AMHere's a quick post today with my old peanut-free, soynut butter cookie recipe!
I personally use WowButter at home for a few reasons - we like the texture best, it's completely nut free, it tastes (to us) the closest to real peanut butter, and, it comes with school-safe stickers under the label that moms and dads can affix to kid's lunch containers and ziplocs so that teachers know that what the child is eating is school-safe. about 30 minutes
Yield:
about 36 cookies
Ingredients:
½ cup granulated sugar
½ cup packed brown sugar
½ cup soynut butter (I use WowButter - Amazon affiliate link - I buy it by the case, I find it's cheaper this way)
½ cup softened butter or margarine
1 egg
1 ¼ cup all-purpose flour
¼ teaspoon salt
½ teaspoon baking powder
¾ teaspoon baking soda
Optional Supplies:
Parchment Paper
Wax Paper
Drinking glass
Directions:
- Preheat oven to 375°F. Combine soynut butter, butter, sugars, and egg in a large bowl. Mix in the remaining ingredients.
- Shape dough into 1" balls and place on a non-stick cookie sheet or parchment-lined sheet, placing them about 3-4" apart. Using a piece of wax paper laid across the top of the balls and the bottom of a drinking glass centered on each ball, press with even pressure to create cookies with an even thickness, then carefully peal away the waxed paper (see pictures below) OR - using a lightly floured or sugared fork, flatten each ball with a criss-crossed pattern.
- Bake 8-10 minutes, until light golden brown. Cool on wire rack.
- Enjoy!
My husband says they taste pretty close to the real thing - a little milder tasting, and not as dry in his opinion. My kids and I love them, and, great thing is that they are school safe!
